Baby Marrow Salad


Baby Marrow Salad copy

6 to 8 baby marrows
Balsamic vinegar
Avocado or olive oil
Chilli flakes
Bunch of fresh coriander
Parmesan cheese


  1. Slice the baby marrows into paper thin slices.
  2. Arrange the baby marrow slices in concentric circles on a flat plate.
  3. Sprinkle with balsamic vinegar and avocado oil.
  4. If you enjoy a bit of a bite, sprinkle chilli flakes to your taste.
  5. Break up the coriander and sprinkle it over the top of the baby marrow.
  6. Use a vegetable peeler to shave parmesan cheese over the top

Enjoy as a side salad or a starter.
