Bean Dip Veggie Platter


1 tin of butter beans or small white beans, drained

Rind of half a lemon
Juice of half a lemon
1 Tbs olive or avocado oil
1 clove of garlic
1 tsp chilli flakes (optional)
1 Tbs chopped mint
1 Tbs chopped parsley
Salt and pepper to taste


Place all of the ingredients into a food processor.
Blend until smooth and creamy.
Transfer the mixture to a serving bowl.
Cover with 1 Tbs of olive or avocado oil, a sprinkle paprika, and a little chopped mint.

To serve:
Serve with an assortment of sliced raw veggies and pita triangles or Provitas.
